Jul 28, 2021 New Potato & Asparagus Salad with Strong Horseradish Sensationally Simple! Ingredients:500g New Potatoes125g Asparagus SpearsHandful of Sugar Snap Peas, halved lengthwaysHandful of chopped RadishesHandful of Pea ShootsSmall bunch of Dill, roughly chopped For the dressing:130g Crème Fraîche3-4 tbsp Tracklements Strong Horseradish Cream2 tbsp Olive Oil, plus a little extra1 tbsp Lemon Juice1 tbsp Cider Vinegar1 tbsp Honey Method: Boil the potatoes until tender then cut in half lengthways, toss in a little olive oil and season. Toss the asparagus spears in oil and season. Heat a griddle pan until searing hot, griddle the potatoes cut side down until strong lines appear. Repeat with the asparagus. Arrange the potatoes, asparagus, radishes and sugar snap peas on a serving platter. Whisk together the dressing ingredients and season to taste. Drizzle the dressing over the salad, finish with the pea shoots and dill sprinkled on top.
