Dec 10, 2012 Tomato Salad with Mustard and Mint Dressing Serves: 4 (as side dish) Ingredients 3 British beef tomatoes 3 spring onions For the dressing: 1 teaspoon Dijon Mustard 2 teaspoons tarragon or white wine vinegar2 tablespoons olive oilpinch brown sugar1 teaspoon finely chopped mintsalt and freshly ground black pepper Method Turn the tomatoes on their side and cut down into 0.5cm slices. Arrange in overlapping circles on a plate. Trim and clean the spring onions. Cut in half lengthways and slice on the diagonal. Scatter over the tomatoes.
