    Tomato Salad with Mustard and Mint Dressing

     

    Serves: 4 (as side dish) 

    Ingredients

    3 British beef tomatoes
    3 spring onions

    For the dressing:

    1 teaspoon Dijon Mustard
    2 teaspoons tarragon or white wine vinegar
    2 tablespoons olive oil
    pinch brown sugar
    1 teaspoon finely chopped mint
    salt and freshly ground black pepper

    Method

    Turn the tomatoes on their side and cut down into 0.5cm slices. Arrange in overlapping circles on a plate.

    Trim and clean the spring onions. Cut in half lengthways and slice on the diagonal. Scatter over the tomatoes.

    Whisk all the dressing ingredients together and drizzle over the salad.
