Jun 30, 2021 Warm Chilli Chicken Salad Family Favourite Serves 4. Ingredients:4 Chicken Breasts, cut into strips8 Medium sized Potatoes1 Red Pepper1 Yellow PepperSalad Leaves For the marinade:Juice of half a Lemon1 tbsp Virgin Olive Oil3 tbsp Sherry or White Wine1 Clove of Garlic, Crushed4 tsp Fresh Chilli Jam Method: Pre heat oven to 180°C / 350°F / Gas Mark 4 Mix the marinade ingredients together in a bowl, add the chicken, coat well and leave for an hour. Cut the potatoes into wedges and the peppers into strips, toss them in a little oil in a roasting tin and season before roasting on the top shelf of the over for 25mins or until cooked. Fry the chicken with a little oil until browned then cook on the middle shelf of the oven for 10 mins or until cooked through.
